Ika-somen is a dish that is most famous in Hakodate, Hokkaido. The word somen is referred to a common type of noodles in Japanese cuisine made of wheat flour and Ika means squid. So if transliterated correctly this dish means Squid noodles. However, there really isn't any noodles involved in this dish. All there is is thinly sliced raw squid, cut into the shape of noodles and served with soy sauce and grated ginger. There are other version of the dipping sauce which includes uni and soy sauce or just wasabi and soy sauce. This dish is a work of art, not only it looks gorgeous on the plate but tastes super fresh and chewy. If you are into raw meat then I would recommend trying this dish.
