Yaki Ramen

Yaki Ramen is a specialty dish where you can only eat at the yatai stands in Hakata city of Fukuoka prefecture. The majority of the yatai stands you will find nearby the river of Nakasu. This dish is basically ramen stir-fried and then transferred to an iron plat. They then top it with chashu pork and scallions and finishing off with a drizzle of the famous Hakata tonkotsu soup. I'd strongly suggest you to try this dish because I know some like soup noodles while others like it stir-fried. I basically like the stir-fried version more because the tonkotsu aroma is a lot less intense than the regular Hakata tonkotsu ramen. If you like ramen or noodles then this specialty dish is a must try!

Yaki Curry

Yaki Curry

Yaki Curry or bAked curry in English is a specialty dish in Kitakyushu city, especially the Mojiko region (Fukuoka prefecture). In Chinese culture, we have a lot of baked rice dishes and curry is one of them but however this one is quite different. So the put the rice into this iron plate and then crack an egg in the middle. Then they pour hot boiling curry over the top and topping it with cheese before the bake it in the oven. To eat this dish, you are suppose to break the egg and then mix it up with the curry, cheese and rice. Most shops uses those store bought curry rue cubes while some have their own special curry recipes. I have been to 3 different shops and only one of them had a different type of curry.

Another recent specialty is a more modern take on the Yaki curry with banana slices in it. It has a nice balance of spice and sweetness to it. However you can taste that they use those curry rue cubes so it's not really homemade. It is really unusual to find banana and curry together so if you want to try something special the. I would recommend trying this dish.

The 3rd shop I went to had the best curry since it wasn't that flavour I always taste. This shop's curry had a Thai flavour to it, it's like a fusion between a Japanese-Western classic with a Thai style twist to it. Though the prices here is a little bit more but I think it was worth it since it has a better flavour and don't have to go through all the long lineups. Many Japanese people only check a few sites and usually just lineup for the top 2-3 shops, so why bother when you can come to this shop and have something much more different yet still very local to the area?

Uwajima Tai-meshi

Uwajima Tai-meshi

Tai-meshi is one of the more well-known soul food of Ehime prefecture. However people from abroad might not know that there are actually 2 types of Tai-meshi in Ehime. The first one is the Matsuyama style which is rice served with cooked Tai while the other one is the Uwajima style which is served with raw Tai slices. For this blog entry I will be focusing on the second one, the Uwajima style Tai-meshi. The Uwajima-style Tai-meshi is mostly eaten in the Uwajima region of Ehime, which is located in the more southern part of Ehime close to the border with Kochi prefecture. The steps to devour this delicacy is simple. First you take the raw egg and put it into the sauce and mix it well. Then you add the sauce on to the raw slices of tai and rice according to taste. The sauce is kind of sweet so beware on the amount you add.

I found out this joint while wandering around the streets near Okaido. This burger joint first caught my eye because my friend told me that I have to try their Tai or Hamachi if I ever go to Ehime. When people think of Ehime and Tai they would immediately think of the two different Tai-meshi, the Uwajima style and the Matsuyama style. However I wanted to have something out of the ordinary and that's why my food sense led me to this burger joint. Here they fry their piece of Tai and top it with onions and tar tar sauce. Though this dish might not look traditional, many locals do visit this joint and I believe this burger has also become one of the great soul-food of Ehime.
